Very quick savory bites, tasty and flavorful. Simple and fast recipes are always my — and your — favorites. It happens to everyone: friends arriving unexpectedly, an impromptu toast, or simply that craving for something tasty while watching a movie, but with little time (or desire) to spend long at the stove. In a few minutes, mixing all the ingredients in a bowl, you can bring to the table fragrant little bites that have nothing to envy to those from a bakery. The best part? You can customize them with what you already have in the fridge, so they’ll be different and special every time! If you’re looking for other tasty ideas for the aperitif, here are my Cooked ham rolls, the Bresaola tortelloni with goat cheese and the Zucchini savory pastries. They have a texture that recalls famous crunchy crackers or savory appetizer cookies, but with that genuine flavor only homemade food can give. They’re perfect because they do not need to rise: you mix, cut and bake… it doesn’t get any easier! These savory bites are so good you’ll keep reaching for them, just like cherries! These quick savory bites without yeast are the magic solution. They are prepared with just a few ingredients everyone has in the kitchen and require no waiting time. In less than 10 minutes you’ll have a dough ready to roll out, cut and bake. The result? Crunchy, aromatic bites that are certainly healthier than the packaged ones, because they’re made with raw materials chosen by you. They prove that with a bit of flour, some good cheese and a pinch of imagination you can create a crunchy masterpiece in no time.

How to prepare very quick savory bites
In a bowl, beat one egg with a pinch of salt, 2 pinches of black pepper and the milk.
Add the extra virgin olive oil and stir.
Add the grated Parmesan and the flour. Continue with a teaspoon of baking powder for savory tarts and mix.
Now add the filling: speck and the cheese cut into small pieces.
Add the pitted black olives, chopped into small pieces. Mix first with a fork and then with your hands.
Transfer the dough onto a floured work surface and knead briefly to bring it together.
Roll the dough on a lightly floured surface to a thickness of about 3/16 inch (approx. 0.16–0.20 in). Using a small round cutter, cut out many small discs. You can also use a plastic bottle cap.
Place the bites as you prepare them, slightly spaced, on a baking sheet. Spray them lightly with cooking oil.
Bake the Olive Savory Bites in a preheated oven at 374°F (conventional/static setting) for 18–20 minutes.

Loredana’s Tips
The savory bites can be stored in a paper bag for 2–3 days. I don’t recommend a plastic bag because they tend to soften over time.

Your questions
How to make the savory bites crunchier?
The secret is the dough thickness: the thinner you roll them, the more they’ll resemble crackers. Also, letting them cool completely on a wire rack after baking allows residual moisture to evaporate, making them crisp.
Can I replace olive oil with vegetable oil?
Yes, you can substitute with 4 tbsp of vegetable oil (≈ 60 ml).
What can I use instead of paprika?
You can use rosemary, oregano, turmeric, or mixed seeds.
What can I use instead of speck?
Cooked ham, pancetta, or salami work well.
