Ingredients for Taralli with speck

  • 3 1/3 tbsp extra virgin olive oil
  • 4.7 fl oz white wine
  • 1.8 oz grated Grana Padano
  • 2.1 oz speck
  • 2.1 oz emmental
  • 1.4 oz black olives (pitted)
  • 1 3/4 cups flour
  • 1 teaspoon instant baking powder for savory preparations
  • to taste salt
  • 1 pinch pepper

How to prepare very quick Tarallini

  • Mix the white wine with a pinch of salt, two pinches of pepper and the extra virgin olive oil in a bowl. Stir. Add the grated Grana Padano and the flour. Continue with one teaspoon of instant baking powder for savory cakes and mix

  • Now add the filling: the speck and the cheese cut into small pieces. Also add the pitted black olives cut into small pieces. Mix first with a fork and then with your hands. Transfer the dough to a floured work surface and knead to compact it.

  • Cut pieces and roll them on the lightly floured surface. Cut sticks about 3.5–4 inches long. Close them by joining the two ends. Prepare them all the same way, arranging them side by side on a baking sheet lined with parchment paper. Spray them lightly with oil spray. Bake the olive and speck tarallini in a preheated oven at 374°F (conventional) for 16-18 minutes
