The asparagus and potato patties are a simple, light main course perfect for the whole family.
Crispy on the outside and soft inside, these patties baked in the oven are ideal both as a vegetarian alternative to classic mains and as tasty finger food to serve on any occasion. A great idea to help children eat asparagus, thanks to their delicate and comforting flavor.
If possible, use fresh or wild asparagus; alternatively, purchased asparagus will work fine as long as it is of good quality.

Ingredients
- 2 potatoes (large)
- 5 oz asparagus ((about 150 g))
- 3.5 oz mozzarella ((about 100 g), diced)
- 1 tbsp grated Parmesan cheese
- 1 clove garlic
- as needed breadcrumbs
- as needed extra virgin olive oil
- 1 small bunch parsley
- 1 tsp chives
- to taste salt

Steps
To make the asparagus and potato patties, peel the potatoes and boil them in plenty of salted water. Once cooked, press them through a potato ricer and place them in a bowl.
Wash and trim the asparagus. In a pan, lightly brown the chopped garlic — or leave it whole (remove it before forming the patties) — with a drizzle of extra virgin olive oil.
Then add the asparagus, season with salt and cook with a ladle of water. Once the asparagus are cooked, remove them from the heat and chop them into pieces.
In the bowl with the potatoes, add the asparagus, the mozzarella cut into small cubes, the Parmesan and begin to mix the ingredients. Then add the chopped parsley, the chives and some breadcrumbs, until you obtain a homogeneous, compact mixture.
With your hands, form small balls about the size of a walnut, and roll them in the breadcrumbs.
Place the patties on a baking sheet lined with parchment paper and drizzle with a little oil.
Bake in a preheated oven at 392°F for 15 minutes, until golden. Serve hot — enjoy!
