Pasta with Zucchini Cream, Shrimp and Zucchini Chips

The pasta with zucchini cream, shrimp and zucchini chips is a rich and flavorful alternative to the classic pasta with zucchini and shrimp.

In this recipe the zucchini are cooked in two different ways: part of the zucchini is sautéed to make a cream with Parmesan; the other handful of zucchini is sliced into rounds and fried to make chips.

This first course is then enhanced with shrimp quickly sautéed in a pan.

Pasta with Zucchini Cream, Shrimp, and Zucchini Chips

Ingredients

  • 7 oz pasta
  • 2 zucchini
  • 5 oz shrimp
  • 3 tbsp grated Parmesan
  • to taste garlic
  • to taste basil
  • to taste extra virgin olive oil
  • to taste salt

Steps

  • To make the pasta with zucchini cream, shrimp and zucchini chips, cut one zucchini into cubes.

  • Pour a drizzle of oil and the garlic into a pot. Place over low heat; when the garlic is lightly golden add the zucchini and a few basil leaves.

  • If necessary add a splash of water and cook until the zucchini are soft. At the end of cooking salt and remove the garlic.

  • Pour the zucchini into the blender jar and add the Parmesan. Add a splash of water and blend until you obtain a creamy mixture.

  • Pour the cream back into the pot where the zucchini were cooked.

  • Wash and trim the zucchini, then slice them into thin rounds. Fry them in a small skillet with hot extra virgin olive oil and a few basil leaves to make chips.

  • When the zucchini are golden, drain them and place on paper towels.

  • In the same small skillet used for the zucchini chips, add the shrimp (previously cleaned and peeled) and sauté them.

  • Cook the pasta in plenty of boiling salted water; once cooked (preferably al dente) drain it and add it to the pan with the zucchini cream.

  • Toss and cook for a few minutes, then incorporate the shrimp and the chips.

  • If necessary, add some of the pasta cooking water to help the cream coat the pasta well.
