Savory tart with zucchini and potatoes

The savory tart with zucchini and potatoes is a rich and tasty vegetarian idea, to serve as a main course or for an aperitif with friends.

To make this recipe I used puff pastry, which I filled with pan-cooked zucchini, boiled potatoes, grated Parmesan, breadcrumbs and mozzarella.

Irresistibly tasty, this savory tart will win everyone over!

Savory tart with zucchini and potatoes

Ingredients

  • 1 roll puff pastry
  • 2 zucchini
  • 12 oz potatoes (peeled)
  • 3.5 oz mozzarella
  • to taste grated Parmesan
  • to taste breadcrumbs
  • Half onion
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste extra virgin olive oil

Steps

  • To make the savory tart with zucchini and potatoes, peel and clean the potatoes, cut them into cubes and boil them in a pot of plenty of salted water.

  • Once blanched, pour the potatoes into a bowl and season them with a pinch of salt, oregano, 1 tablespoon breadcrumbs and 1 tablespoon grated Parmesan.

  • Drizzle with extra virgin olive oil and mix the potatoes with a spoon to coat them well.

  • In a skillet pour a drizzle of extra virgin olive oil and some chopped onion. Sauté the onion lightly, then add the zucchini cut into rounds.

  • If necessary add 1 tablespoon of water to cook the zucchini and prevent them from sticking to the pan.

  • Take a tart pan and place the puff pastry, leaving the attached parchment paper.

  • Sprinkle the base of the puff pastry with a dusting of breadcrumbs and Parmesan.

  • Then spread the zucchini, add the chopped mozzarella and finally the potatoes.

  • Fold the edges of the puff pastry inward, bake in a preheated oven at 392°F for 20 minutes, or until golden.

  • Serve the savory tart warm — enjoy!
