Ingredients for the purple and yellow cauliflower quiche
- 1 puff pastry
- 2 1/2 cups (florets) purple cauliflower
- 2 1/2 cups (florets) yellow cauliflower
- 3.5 oz (about 1/2 cup) stracchino cheese
- 1.4 oz (about 1/3 cup) grated Parmesan
- 4.2 oz (about 1 cup shredded) melting cheese
- 3 tablespoons extra virgin olive oil

Steps for the cauliflower quiche

Thoroughly wash the cauliflowers under running water. Cut them into florets and cook them in a steamer pot for 8-10 minutes or boil them in plenty of salted water.
When cooked, let them cool. Once at room temperature, place in a bowl and dress with the extra virgin olive oil, half of the grated Parmesan, season with salt and toss.
Roll out the puff pastry onto a round pan 12.6 in (32 cm) lined with parchment paper. Cover with slices of the melting cheese, pour in the cauliflower and fill with the stracchino and the remaining grated Parmesan.
Bake in a conventional oven at 356°F for about 35 minutes until golden, or in air fryer mode at 356°F for 20 minutes or until golden.
After baking, let rest for 5 minutes and serve hot to enjoy the stretchy cheese.
Storage
The cauliflower quiche can be kept at room temperature wrapped in cling film or in an airtight container for 24 hours, or in the refrigerator for 3 days.
Before serving, warm it in the oven at 338°F for a few minutes or in the air fryer at 320°F.
You can freeze it for up to three months. Thaw at room temperature or overnight in the fridge and reheat in the oven or air fryer until the texture is restored.
