Ingredients
- 1 1/2 cups Rice (Risotto rice (e.g., Arborio))
- 1 onion
- as needed white wine
- 4 processed cheese slices (1 per person)
- as needed parsley (fresh)
- as needed salt
- 4 1/4 cups vegetable broth
- as needed extra virgin olive oil
Steps
Prepare a vegetable broth in a pot using vegetables or vegetable bouillon if you don’t have time.
In another pot, brown the thinly sliced onion in 2-3 tablespoons of extra virgin olive oil.
Add the rice to toast it, then pour in the white wine. Wait a few minutes for it to evaporate.
Cook the rice by adding broth with a ladle as it is absorbed.
When the rice is perfectly cooked, before turning off the heat, add chopped parsley and the processed cheese slices. Plate and serve hot.
