- 7 oz smoked scamorza cheese
- 28 oz (1 lb 12 oz) friarielli
- 1 chili pepper
- to taste extra virgin olive oil
- to taste salt
- 1 clove garlic
How to make Puff pastry rolls with friarielli
Let’s start preparing the puff pastry rolls with friarielli. Clean the friarielli: set aside the stems with the smaller, tender leaves and the flower buds, remove any yellowed parts from the larger leaves. Strip the leaves from the stems by holding the stem with one hand and pulling the leafy part up with the other so you can extract the leaf. Rinse the leaves and buds under running water.
Pour extra virgin olive oil into a frying pan, add the garlic clove and the chili pepper, let them infuse, then add the friarielli. Cover with a lid, put on the heat and cook until tender. Season with salt and let cool.
Grate the smoked scamorza with a coarse grater, or slice it into thin strips.
Unroll the puff pastry, spread the friarielli evenly over the entire surface and add the grated scamorza.
Roll starting from the longer side, but not too tightly, otherwise the inner pastry may remain raw — during baking it needs room to puff and cook. Cut the roll into slices about 3/4 inch thick.
Arrange the swirls on a baking sheet lined with parchment paper and bake in a preheated conventional oven at 356°F for 25–30 minutes.
