- 18 oz pearl onions (borettane (small pearl onions, about 1.1 lbs))
- 1 tbsp extra virgin olive oil
- 1 tbsp sugar
- to taste thyme (fresh or dried)

Place the EVOO (extra virgin olive oil) in a pan and brown the pearl onions for 5–10 minutes.
Now add the sugar, season with salt and pepper and pour into the pan 5 fl oz (about 2/3 cup) of hot water with the leaves of fresh or dried thyme, depending on what you have available.Let the mixture dry, allowing the water to evaporate, and after about 20–25 minutes the pearl onions will be ready!
