I worked for several years in restaurants and pubs serving Greek cuisine and from there I learned to love feta. This baked feta with lemons and onions recipe is quick, has a short baking time, and the result is excellent.
I used Tropea onion, lots of oregano and thyme, and a drizzle of good extra virgin olive oil. The lemons become almost candied while baking and marry perfectly with the onion. I ate it as a main course and I often make it again when I have guests at the table,
It was for me a main dish and I must say I liked it a lot — I even ate the lemon slices, which then taste like candied fruit and pair masterfully with the onion!
In the kitchen I had the Tropea onion but use whatever you have available, no problem!

Ingredients
- 4 slices feta cheese
- 5.3 oz Taggiasca olives (pitted (I used ALDI's))
- 2 lemons (organic or untreated)
- to taste fresh chili pepper
- to taste extra virgin olive oil
- to taste thyme (I only had dried thyme, unfortunately!)
- to taste dried oregano
- to taste salt (beware of the saltiness of the feta—adjust accordingly!)

Steps
1) For the baked feta with spices and lemon line the baking dish with parchment paper and arrange the slices of Greek feta.
2) Peel the onions and cut them into wedges.
3) Wash the lemons and cut them into not-too-thick slices!
4) Scatter red onion wedges here and there and lemon slices (organic or untreated), then add extra virgin olive oil, a pinch of salt and Taggiasca olives (pitted).
5) Sprinkle everything with dried oregano and thyme and bake at 374°F for about 25 minutes, or according to your oven and taste, until more or less golden.
6) I’d say we can sit at the table now!!!!

The red onion is delicious but if you don’t have it, opt for yellow or white — the addition of aromatic herbs is essential to broaden flavor and aroma!
