I didn’t have much time for the meal today and looking in the fridge I saw I needed to use up a rectangular roll of puff pastry and some diced cooked ham, so I decided to make a savory pie — an easy rustic tart with eggplant, cooked ham and mozzarella.
As soon as it was warm I bit into it and I must say it is not just good but much, much more, and I had a hard time saving a few slices to let the family’s super food critic taste it — that is, the teenage son!
I sprinkled a few sesame seeds on the surface of the pastry after lightly wetting it with water, but you can also use POPPY seeds, which are crunchy and might even work better! I was generous with quantities — for example 120 grams of diced cooked ham might be too much, but I didn’t want more random leftovers, so as the saying goes meglius abundare quam deficere — eh eh….
I suggest other savory pies or puff pastries that are great as alternative dinners or, if cut into small squares, as appetizers like….

- 1 roll Puff pastry (rectangular)
- 2 eggplants (long ones)
- 4 oz diced cooked ham
- 1 1/8 cups mozzarella (julienned)
- 5 datterini tomatoes (sliced)
- to taste sesame seeds (or poppy seeds)
- salt

FOR THE PREPARATION OF THE RECIPE EASY RUSTIC TART WITH EGGPLANT, COOKED HAM AND MOZZARELLA
Wash, trim and slice the eggplants thinly.
Grill them on a very hot griddle until done, then place them in a container.Preheat the oven to 374°F. Unroll the puff pastry and lay it in the baking pan using the parchment paper from the package.
In the central part of the rolled-out pastry, place the grilled eggplant slices.
On top add the mozzarella and the diced cooked ham.
Wash and cut the datterini tomatoes into small rounds and scatter them over the rustic tart.
Fold the two non-filled lateral parts of the puff pastry over each other, slightly overlapping, and moisten a little with water to help the layers join.
Very lightly wet the surface of the easy rustic tart with eggplant and mozzarella and sprinkle with sesame seeds.
Bake in a hot oven for about 30–35 minutes until the savory pie is nicely golden. Let it cool slightly and serve this delicious puff pastry focaccia! Enjoy your meal…. See you soon! Annalisa
