- 6 oz linguine (or spaghetti)
- 3 1/2 tbsp salted butter
- 1 lemon (organic zest and juice)
- 3 tbsp breadcrumbs
- to taste salt
- to taste black pepper
- to taste mint (fresh)
- to taste extra virgin olive oil

I start the linguine recipe by toasting the breadcrumbs in a pan with a splash of extra virgin olive oil for a few minutes, then I set the mixture aside.
I put a large pot of water on the heat for cooking the pasta and when it boils, I add the pasta and cook it al dente.
In a separate pan I gently melt the salted butter, adding the juice and the grated zest of the organic (or untreated) lemon and adjusting with salt and pepper.
I wash the mint leaves, pat them dry and after chopping them, I mix them into the lemon-butter in the pan.
I add the wet pasta and while tossing (mantecatura), I pour in the golden breadcrumbs toasted earlier.
I kept a ladleful of the cooking water to add only if needed…
I plate my guests’ dishes and serve immediately!
