PORRIDGE OVERNIGHT OATS GRANDMA’S CAKE FLAVOR
A nice cup of this Anglosaxon-origin dessert and we’ll be ready to face the day’s challenges whether at the office, at school, doing housework at home or, for those who can afford it, sightseeing in towns and cities.
For those who don’t know, Overnight Porridge is a no-cook variant of the classic anglosaxon recipe, perfect for those who have little time or don’t feel like cooking.
It’s prepared in advance, usually the night before, left in the fridge overnight and ready to enjoy in the morning with the topping of your choice.
A very simple recipe: rolled oats are mixed with water or milk, Greek yogurt, flavored as you like with vanilla and sweetened with honey.
Once mixed there is no need to cook it; simply place it in the fridge to rest for at least 4 hours, preferably overnight.
In today’s PORRIDGE GRANDMA’S CAKE recipe, I created a first layer with the Porridge, then added a few spoonfuls of PASTRY CREAM I had left over from making a cake, and finished with lightly toasted pine nuts and a dusting of powdered sugar.
The name Torta della Nonna (Grandma’s Cake) comes from the fact that the flavor vaguely resembles that delicious and very famous cake.

How to prepare PORRIDGE Grandma’s Cake flavor
In a bowl, mix together the rolled oats, honey, yogurt and almond milk (or cow’s milk or another plant beverage) until combined. Transfer the mixture to a single-portion serving cup and place in the fridge for at least 4 hours, preferably overnight.
After resting and before serving, finish the preparation. Prepare the Pastry Cream following the recipe you find HERE, or use a vanilla pudding/protein cream. Add a few spoonfuls on top of the porridge, level with the back of a spoon and scatter lightly toasted pine nuts and powdered sugar over the surface.
NOTES ingredients and substitutions
WATER To make a creamier porridge you can replace the water with an equal amount of cow’s milk or plant milk (soy, almond, oat, rice).
HONEY You can replace honey with maple syrup or a sweetener for a lighter version.
PASTRY CREAM: If you don’t have time or don’t feel like making it you can buy it ready-made in the supermarket or substitute it with a vanilla dessert (including protein creams) from the refrigerated section.
VANILLA It’s incredible how a pinch of this extract can improve the taste of your porridge, but if you don’t like it you can omit it.
OVERNIGHT REST: Let the oats rest in the fridge for at least 2-3 hours, preferably overnight. This allows the flavors to meld and the oats to soften to the perfect texture.
STORAGE
The PORRIDGE OVERNIGHT OATS GRANDMA’S CAKE FLAVOR can be prepared the evening before for the next day — it will actually be even better. Once ready, store it in a closed container in the fridge for up to 2 days.

How can I get the right consistency for the rolled oats?
Getting the perfect oat consistency is all about the oats-to-liquid ratio. In general, a 1:2 ratio works well. If the oats are too thick, add a little more liquid; if too runny, reduce the milk/water slightly next time.
How can I balance the sweetness when I add fruit and toppings to the oats?
Overnight Oats can become too sweet with some pairings (for example with hazelnut or pistachio cream). Keep that in mind when layering and, if in doubt, taste a spoonful before adding extra sweeteners like honey or maple syrup.
Can I heat my Overnight Oats porridge or should it be eaten cold?
Overnight Oats are traditionally eaten cold or at room temperature, but if you prefer them warm you can heat them for a few seconds in the microwave.
