I’ve always known homemade Russian salad, but unfortunately with the classic mix of frozen diced vegetables along with industrial mayonnaise which, mind you, is delicious, but I recently felt the need to compare it with a fresh version.

For this reason, today I will show you how to make a simple Russian salad with the minimal ingredients to be considered as such. I started from the basics, with fresh vegetables, and also made the mayonnaiseeasily and quickly!

The procedure takes little time and is very simple to do, and I assure you that you can taste the difference! You’ll feel like you’re eating an authentic, quality final product.

Ingredients

For the Homemade Russian Salad

  • 3 large potatoes
  • 2 carrots
  • 3.5 oz peas
  • 1 3/4 cups homemade mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp salt

Steps

To make the Homemade Russian Salad

  • Start by washing and drying the potatoes and carrots, then peel both and cut them into sticks. To ease the task, you can use a vegetable cutter suitable for this purpose.

  • Then cut the sticks into pieces to get typical cubes for the preparation of Russian salad.

  • At this point, steam the potatoes with the carrots and peas for about 35 minutes. At the end of cooking, make sure all the vegetables are well cooked.

  • Next, take a large bowl and put all the cooked vegetables inside, then prepare for the final steps.

  • To complete, add a teaspoon of salt, a tablespoon of apple cider vinegar, and 1 3/4 cups of homemade mayonnaise (recipe here).

  • Finally, gently mix everything with a silicone spatula and place your salad in a smaller bowl before serving.

Tip!

Russian salad can be eaten warm, but it is even better cold! You can store it in the fridge for about 3 days in an airtight container.
