Meatloaf with Mushrooms and Smoked Cheese (Egg-Free)

in

The baked meatloaf with beef and a filling of mushrooms and smoked cheese is a rich and enveloping main course, perfect for a family dinner or to impress guests.

Prepared in a loaf pan, it maintains a compact and elegant shape, ideal also for serving in slices. The ground beef base is seasoned with aromas, while the heart surprises with a creamy and stringy filling: sautéed mushrooms that add flavor and aroma, combined with smoked cheese that, melting during cooking, provides an irresistible taste contrast.

In the oven, the meatloaf compacts, developing a golden crust on the outside that encloses all the internal softness. The result is a dish with a rustic yet refined flavor, bringing an irresistible aroma and tasty slices to serve hot, perhaps accompanied by a vegetable side or a creamy purée.

A traditional comfort food, with an extra touch provided by the smoked cheese and the fragrance of the mushrooms. Egg-free version.

Ingredients

  • 1 clove garlic
  • as needed extra virgin olive oil
  • 7 oz mixed frozen mushrooms (or fresh)
  • 1 lb ground beef
  • 2 tablespoons breadcrumbs
  • 1 teaspoon salt
  • 2 tablespoons grated parmesan
  • as needed chives and sage
  • 9 slices smoked cheese
  • a few sun-dried tomatoes
  • 1/4 cup red wine

Tools

  • Pan
  • Salad Bowl
  • Parchment Paper
  • Loaf Pan
  • Rolling Pin

Steps

  • First, heat the pan with a drizzle of oil and let it flavor for a few minutes with a garlic clove. Add the frozen mushrooms, season with salt, and cook for about 10 minutes over medium heat or until the mushrooms are soft and well cooked.

  • Meanwhile, place the ground beef in a salad bowl and add breadcrumbs, parmesan, oil, and salt.

  • Continue by adding chives and sage, and mix everything with your hands until you obtain a well-combined block with all ingredients well distributed.

  • At this point, take all the mixture and place it between 2 sheets of parchment paper. Use a rolling pin to evenly flatten the mixture, covering the entire rectangle of the paper, and finally remove the top sheet.

  • Next, distribute the slices of smoked cheese over the entire surface of the mixture, add the previously cooked mushrooms, and a few chopped sun-dried tomatoes.

  • Proceed by rolling up the mixture starting from one side, using the parchment paper on the base as a guide. Compact the roll well and finally insert it into the loaf pan.

  • To complete, drizzle the roll with red wine and sprinkle some breadcrumbs with a drizzle of oil on the surface. Bake at 350°F for 40 minutes after preheating the oven.

  • Finally, once the meatloaf is removed from the oven, wait about 30 minutes before removing it from the pan. You can serve it sliced with your favorite side dish!

Tips

The meatloaf can be stored in the fridge for up to 2 days, and you can consume it cold or give it a slight warm-up.
