Today I’m here to offer you a fabulous recipe, and I’m talking about ramen! A typical Japanese dish with thousands of variations due to its wide versatility in preparation. There are versions with beef, pork, chicken, seafood accompanied by many ingredients like mushrooms, vegetables in general, and the inevitable egg.
In this version, I chose a completely vegan version, avoiding the use of animal proteins like meat and eggs. For this reason, I simply thought of a ramen made up of noodles, broth, shiitake mushrooms, and leek.
Very easy to prepare, almost instantaneously and fun, ramen will offer you and your guests an intimate moment at the table rediscovering a beautiful culture like the Japanese one.

Ingredients
To prepare the Vegan Ramen
- 8 dried Shiitake mushrooms
- 8.8 oz noodles
- 4.2 oz miso paste
- 1 leek
- to taste salt
- to taste black sesame seeds
- to taste chili pepper

Steps
To make Vegan Ramen
Start by soaking the shiitake mushrooms as follows. Heat 2 glasses of water in a small pot, then turn off the heat and immerse the mushrooms for about 15 minutes or until they are swollen and softened.
Continue by heating a pot of water. Once the water reaches the temperature, add the noodles, wait for the water to boil, and let them cook for another 3-4 minutes or until done.
Once cooked, drain the noodles and rinse them under running water to stop the cooking process.
Now, prepare the broth by heating about 1 3/4 cups of water in a pot and adding the miso paste. Stir well to dissolve it completely.
Meanwhile, take the soaked mushrooms and slice them, removing the central stem that can sometimes be tough and woody.
Now add to the broth the water used for soaking the mushrooms and the previously sliced mushrooms, keeping some aside for the final garnish.
To complete the broth, finally add the leek cut into slices. Make sure to clean the leek well by rinsing it under running water to remove any dirt residues. Again, keep a few slices aside for the final garnish.
As the last step, take a nice big bowl and pour enough ladles of broth to fill it. Then immerse the portion of previously cooked noodles and prepare for the final garnish.
Finally, garnish your fantastic ramen with the remaining mushrooms and leek slices. Also, add black sesame seeds and dried chili before serving!
Tip!
Try to flavor your broth as much as possible to make it tasty. Add soy sauce to taste if needed.
