Single-serve air fryer cheesecake

Single-serve air fryer cheesecake, an extremely simple, light and indulgent dessert, perfect for a breakfast or a healthy everyday snack. The recipe is very easy and I used ricotta to make it, but you can replace it with any other creamy cheese you prefer. This gluten-free ricotta cake is made in a few simple steps with just a few ingredients: egg, ricotta, erythritol and cornstarch. A recipe without added sugars, but believe me, truly delicious! In my version I also added chocolate chips. Of course you can omit the chocolate chips and use pieces of frozen or fresh seasonal fruit. To make it even more indulgent, I spread a hazelnut-cocoa protein spread on top after baking, but you can get creative and use jam or preserves of your choice. Baked in the air fryer, but you can also bake it in the oven, it’s perfect for a healthy everyday snack. Ingredients

  • 1 egg
  • 1 cup ricotta
  • 2 1/2 tbsp cornstarch
  • 3 tbsp erythritol
  • 1 packet vanillin
  • 1/4 cup chocolate chips

Steps

  • First, place the ricotta with the vanillin, the erythritol and the egg in a bowl and begin mixing with a spoon or a whisk until you obtain a smooth, homogeneous cream. Then add the cornstarch and incorporate it into the cream until you obtain a smooth, lump-free mixture.

    Next add the chocolate chips, stir and pour the mixture into a 12 cm mold. Bake in the air fryer at 329 °F for 15 minutes. To check doneness, insert a toothpick; it should come out dry.

  • As soon as the dessert is baked, remove it from the air fryer and let it cool slightly. Then spread the cocoa-hazelnut spread on top, dust with powdered sugar and serve.

The baked single-serve cheesecake can be stored in a cool, dry place for 1 or 2 days, covered with a glass dome or food-grade aluminum foil.
