Greek Yogurt Ice Cream

Temperatures are finally starting to rise a little, and inevitably the craving for ice cream grows! There are even those, like my son and my partner, who would eat it every day, including winter days at 32°F 😉
To have it ready whenever you want, have you ever tried making homemade ice cream without an ice cream maker? Today I suggest GREEK YOGURT ICE CREAM, which for me is by far my favorite flavor, because with its slightly tangy aftertaste it is perfect paired with fresh fruit.
To prepare it you’ll only need three ingredients and no more than five minutes!

Ingredients to make Greek yogurt ice cream

  • 1 cup heavy cream (liquid)
  • 1 cup Greek yogurt (preferably around 5% fat)
  • 10 oz sweetened condensed milk (chilled from the fridge (about 1 cup))
  • fresh fruit (as desired)

Preparation of Greek yogurt ice cream

  • 1. In a bowl pour the Greek yogurt and the sweetened condensed milk, then turn on the electric hand mixer at the lowest speed just long enough to combine the two ingredients well.

  • 2. In another bowl (preferably glass) pour the heavy cream and whip it to stiff peaks with clean beaters.

  • 3. At this point, using a spatula, gently fold the whipped cream into the yogurt and condensed milk mixture a little at a time. To incorporate as much air as possible, fold from the bottom up.

    Make sure to fully combine the cream so you obtain a final mixture that is smooth and glossy.

  • 4. Pour into a loaf pan (or any freezer-safe container) and chill in the freezer covered with plastic wrap for at least 4 hours.

  • 5. Enjoy the Greek yogurt ice cream served with your favorite fresh fruit.

Tips and variations

– By replacing the amount of Greek yogurt with the same amount of whipped cream, you will obtain a delicious fiordilatte (sweet milk-cream) flavored ice cream that you can always enjoy with fresh fruit or by adding chocolate shavings… a true delight!
