And this Easter has arrived too; this year will be a little different because of the situation we are living through.

Today I share with you the recipe for the mock Colomba, made without rising using instant leavening. Truly delicious. HERE I leave you a few Easter-themed recipes.

Ingredients
- 3 Eggs
- 2 3/4 cups All-purpose flour
- 6 2/3 tbsp Vegetable oil
- 3/4 cup Milk
- 3/4 cup Sugar
- Orange zest
- Lemon zest
- 1/3 cup Chocolate chips
- 1 packet Instant baking powder (for savory preparations)
- as needed Pearl sugar
- as needed Almonds
- as needed Chocolate chips

Preparation
To prepare the mock Easter Colomba I used my Thermomix (Bimby); if you don’t have one, a stand mixer or even an electric hand mixer will work fine.
I preheated the oven to 356°F.
In the Thermomix bowl I added the sugar and the lemon and orange zest.
I pulverized for 20 seconds at turbo speed.
I added the eggs and mixed for 2 minutes at speed 4.
Then I added the oil, milk, flour and instant baking powder and mixed again for 2 minutes at speed 4.
I poured the batter into a paper mold for Colomba, decorated with pearl sugar, chocolate chips and almonds, and baked in a conventional oven for about 45 minutes.
