Spinach in a pressure cooker is a simple, wholesome side dish and, thanks to this type of cooking, also very quick. Recently I found some beautiful, tender fresh baby spinach at my trusted greengrocer. Cleaning them takes a little patience, but I assure you it’s worth it: the flavor of fresh spinach is unmatched.
The pressure cooker is the ideal solution for those like me who want to eat healthily but always have very little time. In no time you’ll have perfect spinach ready, great drizzled with a little oil or used as a base for other preparations. You’ll see, once you try this technique you won’t go back!
These spinach go well with any meat or fish main course. If you don’t have fresh spinach, you can safely use frozen spinach; thanks to the steam they will still retain their properties. How to make spinach in a pressure cooker
Let’s start preparing spinach in a pressure cooker. Clean the spinach: remove the root ends, any bad-looking leaves and the tougher stems if necessary. Wash them well in plenty of cold water and leave them soaking to remove dirt. Repeat the washing until the water runs clear, then drain well.
Pour one cup of water into the pressure cooker, place the steamer basket inside and add the spinach.
Close with the lid, check that the valve is closed, put over high heat; as soon as you hear the whistle, lower the heat and let cook for 5 minutes.
After the cooking time, remove the pot from the heat, let the cooker release the steam, remove the lid and take out the spinach with a spoon.
Place the spinach in a bowl and season with salt and olive oil, or sauté briefly in a pan, or use them to make other recipes.
How to store spinach cooked in a pressure cooker.
Store in the refrigerator for 2–3 days or in the freezer for a few months.
