Yogurt cake with berries — a delicious and soft yogurt cake that is easy to make and butter-free. You can prepare it in just a few minutes. I used electric beaters (like these HERE) to go even faster, but alternatively you can use a fork. The yogurt and berries cake is perfect for breakfast or afternoon snack. I used an 8 in pan (like this HERE). If you use a larger pan, the cake will be lower but still soft and delicious. Ingredients to prepare the yogurt and berries cake

  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 2/3 cups mixed berries (blackberries, raspberries, blueberries)
  • 1 2/3 cups all-purpose flour
  • 2/3 cup Greek yogurt
  • 3 1/2 tbsp sunflower oil
  • 1 packet baking powder (about 4 tsp)
  • as needed powdered sugar
  • as needed brown sugar

How to prepare the yogurt and berries cake

  • Let’s start preparing the yogurt and berries cake: wash the berries (blackberries, raspberries and blueberries) and pat them dry with paper towels. Pour the eggs and sugar into a bowl and beat with electric beaters until you obtain a fluffy mixture.

  • With the beaters running, add the sunflower oil in a thin stream and let it incorporate.

  • Add the Greek yogurt and continue mixing with the beaters.

  • Sift the baking powder for cakes.

  • and the flour, then keep working until you obtain a creamy, lump-free batter.

  • Gently fold half of the berries into the batter using a spatula.

  • Grease and flour the pan, then remove any excess flour. Preheat the conventional oven to 356°F. Pour the yogurt and berries batter into the pan and level it.

  • Take the remaining berries, lightly toss them in a little flour and arrange them on top of the batter. This step helps the floured berries stay on the surface during baking instead of sinking.

  • Then sprinkle the entire cake with brown sugar.

  • When the oven is hot, bake for 40 minutes. Baking times may vary depending on the oven; before removing the yogurt and berries cake, perform the skewer test — if necessary bake for another 5 minutes. When ready, remove from the oven, let cool and dust with powdered sugar.

How to store the yogurt and berries cake

Store it at room temperature inside a cake carrier (like this HERE) for 2–3 days.
