Yogurt Shortcrust Pastry (egg-free and butter-free)

Today I want to share the recipe for a yogurt shortcrust pastry without eggs and without butter, perfect for tarts and cookies and ready in less than five minutes. Warmer weather is coming and if we don’t want to give up sweets we can at least make them a little lighter; that’s why I suggest this recipe. Mine is also lactose-free because I’m intolerant, and I use a sweetener instead of sugar, so it’s perfect for many variations. Let’s see how to make it.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup plain yogurt (I use lactose-free)
  • 1/2 cup sugar (I use a natural sweetener (erythritol))
  • 1/4 cup vegetable oil
  • 1 tsp baking powder
  • 1 orange zest (or lemon zest or 2 teaspoons vanilla extract)
  • 1 pinch salt

Steps

For this recipe you will only need a bowl — it’s really simple: start by pouring the flour and sugar (or sweetener) into the bowl, then add the yogurt, oil, orange zest or flavoring of your choice, and the salt. Mix for a couple of minutes until you get a lump-free mixture.

  • The great thing about this dough is that it doesn’t need chilling despite the slightly sticky texture; it can be rolled out immediately between two sheets of parchment paper and used as desired. If you want to make a tart you will need a 24–26 cm pan (about 9½–10¼ in). To make cookies you’ll get about 20–25 cookies depending on the size of the cutter.

  • Of course, baking time will vary depending on what you prepare: cookies will need about 8–10 minutes while a tart will need 20–25 minutes, both baked in a conventional oven at 356°F. The tart can be filled with jam, Nutella or pastry cream, while for cookies you can add cocoa or chocolate chips to the dough to make them even more indulgent.
