Lactose-free cocoa cake, very easy to make and super soft, decorated with lots of sugar stars to make it even prettier. A decadent cake perfect for any occasion that you can also enrich with chocolate chips or chopped nuts of your choice to add directly to the batter. As with all my lactose-free recipes I won’t use butter but sunflower seed oil which will guarantee a moist cake for days, while for the milk you can use whichever you prefer. Ingredients
- 1 1/2 cups all-purpose flour
- 2 eggs
- 7/8 cup granulated sugar
- 1 packet baking powder
- 1/2 cup lactose-free milk
- 6 tbsp sunflower seed oil
- 1/2 cup unsweetened cocoa powder

Steps
To make the Lactose-Free Cocoa Cake, first beat the eggs with the sugar for at least two minutes until you obtain a pale, frothy mixture.
Add the sunflower seed oil and lactose-free milk and mix for a few moments before incorporating the dry ingredients sifted through a sieve. Work the mixture again until you obtain a smooth, homogeneous batter.
With the help of a spatula, gather the batter from the sides and pour it into a slightly greased and floured 9.5-inch pan. Sprinkle the white star sprinkles on the surface. Bake on the middle rack of a preheated convection oven at 356°F for 40 minutes.
Perform the toothpick test to check the cake’s doneness. If the toothpick comes out dry, the cake is ready. Let it cool before removing it from the pan. You can also serve it with whipped cream or ice cream for an even more indulgent idea.
Storage
The cake will stay soft and delicious if stored in an airtight container away from light and heat sources, for up to 5 days. It can also be frozen in convenient portions.
