PANINI WITH ASPARAGUS, COOKED HAM AND MOZZARELLA: THE PERFECT RECIPE FOR THE MAY DAY PICNIC

The recipe for the rolls for the May Day picnic: super easy to make and absolutely delicious.

Yesterday dad brought me a nice bunch of asparagus, we really love them at home in every preparation: the little one loves them blended into her pasta.

So I decided to make simple olive oil rolls (click the word rolls for the recipe) and then stuff them (hahaha) with cooked ham and mozzarella. DIVINE!!! If you pair them with a robust wine, like Montepulciano, bliss!!

Ingredients

  • 4 olive oil rolls
  • 5 oz asparagus
  • 7 oz cooked ham
  • 2 mozzarella (I use lactose-free)
  • olive oil
  • salt

Steps

As I wrote above, I include the recipe to make the olive oil rolls at home — of course if you don’t want to bother, buy them at the supermarket!

  • Clean the asparagus well under running water, cut off the tough ends and put them in a small pot with cold water, bring to a boil: from boiling, wait 7–8 minutes.

    We want them tender but not too soft so you can still taste them between your teeth.

    If you don’t like them whole, you can turn them into a cream by blending them with a little of the cooking water.

  • At this point take a roll and open it: drizzle a little olive oil and sprinkle with salt, place a couple of slices of cooked ham and the asparagus.

    On a plate put a couple of slices of mozzarella and melt them in the microwave for a few seconds.

    With the help of a spatula, spread it on the roll and close it.
