Ingredients
- 1 1/4 cups nonfat Greek yogurt
- 1 lemon (grated zest)
- 1 vanilla bean
- 20 drops stevia (or 2 tbsp honey)
- 8 plain dry cookies (gluten-free)
- as needed skim milk
- 4 tbsp mixed berry jam (no sugar)

Method
Wash the mixed berries and gently dry them with kitchen paper.
Pour the Greek yogurt into a bowl, add the stevia or the honey and the flavorings.
Mix well with a whisk and set aside.
Dip 4 dry cookies in the milk and place them on the bottom of the glasses.
Add a teaspoon of jam on top of each cookie.
With a piping bag make the first layer of yogurt cream, add a few berries and again a layer of cookies soaked in milk.
Decorate with the remaining yogurt cream, the mixed berries and chopped pistachios.
Chill in the fridge for at least one hour before serving.
