Ingredients
- 5 eggs
- 2 2/3 cups zucchini (grated raw)
- 1/3 cup grated Parmesan
- 7 oz smoked provola (well drained)
- 1 pinch nutmeg
- to taste salt and pepper
Preparation
Wash and trim the zucchini, remove the ends and grate them using a coarse grater, collecting them in a large bowl.
Add the eggs, the grated Parmesan and a pinch of nutmeg. Season with salt and pepper, then mix thoroughly until you obtain a homogeneous, well-blended mixture.
Line a rectangular baking pan of about 10×12 in with parchment paper and pour in the mixture, spreading it evenly with a spatula.
Bake in a preheated oven at 356°F for about 25 minutes, until the surface is nicely golden.
Remove the frittata from the oven and, while it is still hot, gently detach it from the parchment paper without removing the paper completely. Arrange the provola slices over the surface.
Roll the frittata from the longest side with the help of the parchment paper, forming a compact roll. Return it to the turned-off but still-warm oven and let it rest for about 5 minutes so that the provola can fully melt.
Transfer the roll to a serving plate, let it cool slightly and slice before serving.
