The Chicken bites and vegetables in the air fryer are delicious, tender and light. They’re also very easy to prepare! I used zucchini and cherry tomatoes that I already had at home, but next time I’ll try other vegetables.

Ingredients for Chicken Bites with Vegetables
- 14 oz chicken breast
- 9 oz zucchini
- 4 oz cherry tomatoes
- 3 tbsp breadcrumbs
- 3/4 tbsp extra virgin olive oil (for spraying)
- 1 pinch salt
- 1 pinch black pepper
- 1 pinch garlic powder
- 1 pinch dried oregano

Steps for Chicken Bites with Vegetables
1 – Cut the chicken breast into cubes, roughly the same size, then place them in a bowl.
2 – Dice the washed zucchini into cubes similar in size to the chicken. Cut the washed cherry tomatoes in half. Add everything to the bowl with the chicken.
3 – Season everything with the oil, salt, pepper, garlic powder, oregano and the breadcrumbs. Mix with a spoon.
4 – Preheat the air fryer. When it’s ready, take out the basket, place a pre-cut piece of parchment paper inside, then add the chicken bites and vegetables and start cooking.
COOKING
In the air fryer: Preheat to 356°F using the preheat program, then insert the basket and cook at 356°F for 20 minutes. There’s no need to turn them halfway through.
In a conventional oven: Preheat the oven to 374°F (static). Once it reaches temperature, bake the bites for 30 minutes.
Notes
It’s better to buy the chicken breast whole so you can cut it into cubes.
You can also add some grated Parmesan together with the breadcrumbs.
I recommend eating them right away; they’re tastier!
They keep in the refrigerator for a couple of days.
