The Positanese orecchiette are a creamy and indulgent first course typical of the Amalfi Coast, particularly Positano, from which they take their name.

An easy, quick first course that is rich, delicious and creamy — despite the absence of cream — very convenient to prepare because it can also work as a one-dish meal.

Ingredients for Creamy Positanese Orecchiette

  • 400 g orecchiette (fresh)
  • 350 g sausages
  • 250 g burrata
  • 400 g tomatoes (cherry)
  • 30 ml extra virgin olive oil (of good quality)
  • 1 garlic (clove)
  • to taste dry white wine (or boiling water)
  • to taste fine salt
  • to taste oregano (or basil)
  • chili pepper (optional)

Steps for Creamy Positanese Orecchiette

  • First, take the sausages, remove the casing and cut the meat into small pieces with scissors.

  • Take a pan, add a little oil and brown the sausage over high heat for about 10 minutes (if desired, deglaze with a little dry white wine or a little boiling water).

  • Once the sausage is cooked, I slightly purée it with an immersion blender. Remove the sausages from the pan and set them aside covered with foil.

  • Cherry tomatoes

  • In the same pan where you cooked the sausages, add one garlic clove, let it turn golden and then add the cherry tomatoes (previously washed, cut into small pieces and seasoned with a pinch of salt). Cook over low heat for about 20 minutes until they soften.

  • Then transfer everything to a bowl and add the oregano (or basil) and the burrata stracciatella; then blend with an immersion blender (or a mixer) until you obtain a creamy mixture.

  • Meanwhile, bring a pot of salted water to a boil and when it reaches boiling point, add the fresh orecchiette, which will be cooked as soon as they rise to the surface (they should be al dente).

  • Once cooked, transfer the orecchiette to the pan together with the warmed cream of tomatoes and stracciatella, then add the sausage and toss for a few seconds with a small ladle of the hot pasta cooking water. Serve hot.

Notes and Tips

The traditional Positanese recipe uses only oregano among the herbs, but if you don’t like it, you can replace it with basil.

If you like, you can also add some grated Parmesan, but it is not part of the original recipe.
