Ingredients
- 2 cups all-purpose flour
- 1 oz grated Parmesan cheese
- 3/4 cup Greek yogurt
- 1/2 cup milk
- 2 tbsp sunflower oil
- 2 eggs
- 2 tsp baking powder (for savory preparations)
- 1/2 tsp baking soda
- 3/4 tsp fine salt
- to taste ground black pepper (a sprinkle as desired)
Steps
1 – In a large bowl, start by adding the liquid ingredients: the beaten eggs, the yogurt, the milk, the oil, the salt, the pepper and also the grated Parmesan so it melts better. Mix the batter well.
Add the sifted flour, the baking powder and the baking soda. Stir roughly to incorporate all the flour, then let the batter rest for 15 minutes.
2 – Preheat a nonstick skillet over low heat, or a pancake pan like the one in the photo I use (very convenient for making pancakes and many other things — click here to buy it).
Brush the pan with a little olive oil and take a generous spoonful of batter for each pancake. Place the batter in the pan and do not touch it until bubbles form on the surface; at that point it is ready to be flipped and cooked on the other side. It will take about 3-4 minutes in total per pancake.
3 – The pancakes are ready; you can serve them as you like, plain or filled. If you want to get creative, you can add to the batter before cooking: chives, chopped fresh basil, chopped sundried tomatoes, chopped green olives… with imagination you can create many variations.
