Zucchini Cooked in the Air Fryer

The zucchini cooked in the air fryer are a very easy side dish to prepare, nutritious and tasty. Thanks to the air fryer, in 20 minutes you’ll have delicious gratinated zucchini. Air fryer zucchini are also great as a pasta topping.

Ingredients for the zucchini cooked in the air fryer

  • 2 zucchini
  • 2 tbsp breadcrumbs
  • to taste salt
  • to taste extra virgin olive oil

Steps for the zucchini cooked in the air fryer

  • Start by washing the zucchini thoroughly, trim the ends and cut them into small, even pieces; this trick will allow you to get an even coating on each cube. Place them in a large bowl, add the breadcrumbs and the salt.

    Mix everything well, shaking the bowl or using your hands so that the breadcrumbs adhere perfectly to the natural moisture of the zucchini.

    Once well coated, place them in the air fryer basket, trying to arrange them evenly.
    Set the cooking to 392°F for a total of 20 minutes. A key step for the success of the dish is halfway through: after the first 10 minutes open the basket and toss the zucchini vigorously so that the heat can brown them on all sides. Close and finish cooking until they are crispy and golden on the surface.

Storage

The zucchini cooked in the air fryer are best eaten hot and fresh so you can enjoy all their crispiness. If you have leftovers, you can store them in the refrigerator for 1-2 days in an airtight container. To bring them back to being tasty, I recommend reheating them for a couple of minutes again in the air fryer or in the oven so they regain their original texture without becoming soggy.
