Strawberry Tart

The strawberry tart is a classic, fresh and tasty dessert. Easy to make, it brings color and sweetness to the table. A great way to enjoy these spring fruits, the strawberry tart is prepared with a soft shortcrust pastry base, filled with pastry cream and garnished with plenty of fresh strawberries. Personally I prefer it this way, without glaze, even though the latter helps with preservation and will keep it for more days when used.

Strawberry tart

Ingredients

  • 2 cups All-purpose flour
  • 7 tbsp Butter (about 3.5 oz)
  • 1/4 cup Sugar
  • 2 Eggs
  • 1 tsp Cream of tartar
  • 1 tsp Baking soda
  • Lemon zest
  • Pastry cream
  • 1 package Strawberries
  • Lemon juice

Preparation

  • To make the strawberry tart, mix the softened butter with the flour and sugar. Then add the grated lemon zest and the eggs. Finally add the baking soda and the cream of tartar (or a packet of baking powder).

  • Work the dough by hand, or with a stand mixer, until you obtain a smooth, homogeneous ball.

  • Press the dough into a greased tart pan (ø10.25 in) and cover it with parchment paper and dried beans to prevent it from puffing up; or you can use the special tart pan.

  • Bake in a preheated oven at 356°F for 20 minutes, until golden.

  • Wash and hull the strawberries, slice them lengthwise and put them in a bowl. Add the lemon juice and stir with a spoon.

  • Fill the tart with the pastry cream and decorate with the strawberries, starting from the edges and covering completely.

  • Cover with foil and store in the refrigerator. Serve chilled. Enjoy!
