  • 3 1/3 cups strawberries (frozen, chopped (about 18 oz / 500 g))
  • 2/3 cup Greek yogurt ((about 5.3 oz / 150 g))
  • 1 egg white
  • Half lemon (grated zest)
  • Half lemon (juice)
  • 3 tbsp erythritol (or sugar (about 1.4 oz / 40 g))

Preparation

Traditional version

  • Wash the strawberries, cut them into pieces and freeze them for at least 6 hours.

  • When you are sure they are frozen, start preparing all the ingredients. Wash the lemon well.

  • Grate half the lemon and squeeze half the lemon to extract and strain the juice.

  • Pour the yogurt into a bowl, add the lemon zest, lemon juice and sweetener and mix well.

  • Separate the egg white and keep it aside.

  • Put the frozen strawberries in the food processor and chop them as if they were ice.

    Then transfer them to a fairly large bowl, add all the ingredients and whisk until stiff peaks form.

  • Pour the ice cream into a plastic container or enjoy it immediately.

    During this operation, scrape down the sides of the bowl with the spatula.

  • Pour half of the mixture into a bowl, fit the butterfly whisk, remove the measuring cup and run for 3 minutes at speed 3.5, adding the rest of the mixture little by little every 5 seconds.

  • Pour the ice cream into a plastic container or enjoy it immediately.
