- 1 cup (≈5.3 oz / 150 g) peaches (thinly sliced (or other fruit of choice))
- 1 cup (≈5.3 oz / 150 g) pears (or other fruit of choice)
- 1 1/4 cup (≈10.6 oz / 300 g) Greek yogurt (2% fat)
- Half lemon (grated zest)
- 2 tbsp (≈30 ml / 1 fl oz) lemon juice
- 2 tbsp (≈25 g) sugar (or 10 g stevia (≈2 tsp) or 36 g erythritol (≈3 tbsp))
- 1 egg white

Preparation: Fruit Ice Cream Without an Ice Cream Maker
Version with electric beaters
Wash the strawberries, or other fruit of your choice, slice them thinly and put them in a bowl with the lemon juice.
Grate the lemon zest. Pour the yogurt into a bowl, add the zest and mix well.
Separate the egg white and set it aside.
Next, place the egg whites in a bowl and whisk them until stiff with a pinch of fine salt.
Meanwhile, in a small saucepan heat 50 g (≈1/4 cup) sugar or 75 g (≈3/8 cup) erythritol or 15 g (≈1 tbsp) stevia in 25 g (≈2 tbsp) of water and let the syrup reach 121°C (250°F), then turn off the heat.
Pour the syrup over the firmly beaten egg whites little by little while the mixer is running.
When the egg whites are stiff and pasteurized, fold in the yogurt using a spatula.
At this point add the sliced strawberries or other fruit.
Pour the ice cream into a single container or into popsicle molds, and place in the freezer for about 6 hours.

Wash the strawberries and other chosen fruit, cut them into thin slices or small pieces and put them in a bowl with the lemon juice.
Grate the lemon zest and collect the juice, which you will add to the fruit.
Separate the egg white and set it aside.
Beat the egg white to stiff peaks with the sugar or sweetener, and
with the butterfly for 4 minutes at 70°C (158°F), speed 3.5.
Remove the butterfly and transfer the mixture to a bowl, add the yogurt and fold from top to bottom to incorporate air; once the mixture is smooth and homogeneous, you can add the fruit.
Pour the ice cream into a single mold or into popsicle molds, and place in the freezer for about 6 hours.

Storage and tips
Yogurt and fruit ice cream without an ice cream maker. You can store this ice cream in the freezer for up to 6 months and take it out 1 minute before unmolding.
If you don’t want to use popsicle molds, you can make the ice creams in small cups and, when you need to serve them, unmold them like semifreddo or eat them with a spoon.
Also, you can use any type of fruit, or if you don’t want fruit you can add chocolate chips.
