Ingredients

  • 1 1/4 cups vegetable whipping cream
  • 7 oz mascarpone
  • 2 tbsp instant coffee
  • 24 Pavesini (chocolate)

Steps

If you use fresh cream, add 2-3 tablespoons of sugar.

  • Whip the cream with an immersion mixer, add the mascarpone and work it again, add the instant coffee or cold moka coffee and whip once more.

  • Soak the cookies in milk and place them upright in the glasses; mine held 8 cookies each. Then, using a piping bag, fill them with the cream.

  • Dust with cocoa and serve, or refrigerate for at least 30 minutes before serving.

If you use moka coffee it must be cold so as not to ruin the cream’s texture
Whip the cream well to get a softer texture
