This Mediterranean ring is delicious, prepared in just a few minutes and without a food processor, a rustic savory cake without leavening: the ingredients are mixed in a bowl and poured into the pan to bake.

Ingredients
- 2 eggs
- 1 1/2 cups 00 flour (type 00) or all-purpose flour
- 1/2 cup water
- 1/4 cup extra virgin olive oil
- 1 tsp instant baking powder (for savory preparations)
- 1 tsp salt
- 3.5 oz cherry tomatoes
- 2 oz pitted black olives
- 3.5 oz provola cheese
- dried oregano
Steps
Pour the eggs into a bowl with the water and oil and whisk by hand.
Add the flour with the baking powder and salt a little at a time and mix gradually with the whisk or a spoon.
Add the pitted olives to the batter and mix gently, then cut the cherry tomatoes and add them, finally add the provola and mix.
Pour the mixture into an 8-inch ring pan (buttered and floured), add a few cherry tomatoes and olives for decoration, sprinkle with oregano and bake.
Bake in a preheated oven at 356°F for 25-30 minutes, do a toothpick test before taking it out of the oven.
