OVERNIGHT OATS PORRIDGE with Coffee Foam – YOGURT AND OAT FLAKES with COFFEE FOAM
Today I present this recipe for a breakfast of oat flakes, milk and Greek yogurt: a kind of porridge that can be prepared in very little time, rich in energy and flavor — COFFEE-FLAVORED OVERNIGHT OATS with Foam.
For those who don’t know, Overnight Porridge is a no-cook variation of the classic Anglo recipe, perfect for anyone short on time or who doesn’t feel like cooking.
It is prepared in advance, usually the evening before, left in the refrigerator overnight and is ready to be enjoyed in the morning with the topping of your choice.
A very easy recipe: the oat flakes are mixed together with milk or water, Greek yogurt, flavored as you like with vanilla and sweetened with a little honey.
Once mixed, there is no need to cook it; simply place it in the fridge to rest for at least 4 hours, preferably overnight.
Once ready, you must only decide whether to layer it with yogurt of your favorite flavor, spreadable creams, and finish it with the topping you prefer.
In today’s recipe I finished it with a Coffee Foam made from instant coffee and water, and finally dusted everything with unsweetened cocoa powder.

- 1/3 cup water (or plant-based drink or cow's milk)
- 1 teaspoon honey (or maple syrup)
- 1/2 cup Greek yogurt 0% fat
- 1/3 cup coffee-flavored Greek yogurt
- 4 tbsp instant coffee
- 1/2 cup water (cold)
- 6 tbsp sugar (optional)

How to prepare Porridge with Oat Flakes and Coffee Foam
In a bowl mix together the oat flakes, honey, yogurt and almond milk (or cow’s milk or another plant-based drink) until combined. Transfer the mixture into single-portion cups and place in the fridge for at least 4 hours, preferably overnight.
After resting and before eating, finish the preparation. You can buy coffee-flavored Greek yogurt ready-made and pour it over the oat layer, or prepare a small cup of espresso (leftover moka coffee from the morning also works) and add it to the yogurt. You may decide to sweeten it or not (I didn’t add anything), then mix until combined.
You can enjoy your no-cook coffee porridge as is and simply dust it with unsweetened cocoa, or if you want to make it extra indulgent prepare the Coffee Foam. To do this, dissolve the instant coffee in cold refrigerator water (add sugar if desired) and then froth it with an immersion blender. Once the foam is ready, pour it over the coffee yogurt layer and finish by sprinkling with unsweetened cocoa powder.
NOTES ingredients and substitutions
WATER To obtain an even creamier porridge you can replace the water with an equal amount of cow’s milk or a plant-based drink (soy, almond, oat, rice).
HONEY You can replace honey with maple syrup or a sweetener for a light version.
VANILLA It’s amazing how a pinch of this extract can improve the taste of your porridge, but if you don’t like it you can omit it.
OVERNIGHT REST: Let the oats rest in the refrigerator for at least 2-3 hours, preferably overnight. This allows the flavors to meld and the oats to soften to the perfect texture.
COFFEE: You can use coffee prepared with a moka pot or with espresso machines. Decaffeinated coffee is fine as well and, alternatively, if you are serving the whole family and there are children, replace it with instant barley coffee.
STORAGE
The COFFEE OVERNIGHT OATS with Coffee Foam made with water can be prepared the night before for the next day — in fact it will be even better. Once ready, store in the fridge in a closed container for up to 2 days.

How can I get the right consistency for the oat flakes?
Getting the perfect oat consistency is all about the oats-to-liquid ratio. In general, a 1:2 ratio works well. If the oats are too thick, add a little more liquid; if too thin, slightly reduce the amount of milk/water next time.
How can I balance the sweetness when I add fruit and toppings to the oats?
Overnight oats can become too sweet with some pairings (for example with hazelnut or pistachio cream). Keep this in mind when layering and taste a spoonful before adding extra sweeteners like honey or maple syrup.
Can I heat my Overnight Oats porridge or should it be eaten cold?
