Sometimes you just don’t feel like cooking, or you have no ideas. That happened to me today. Totally exhausted and zero desire to cook. I had a few tired vegetables in the fridge and decided to make a savory tart. I used what I had at home. Do the same. If instead you want to try this recipe you’ll need very few ingredients.

Ingredients
- 1/2 white onion
- 1 clove garlic
- 7 oz Delica pumpkin
- 7 oz broccoli
- 7 oz red cabbage
- 7 oz green cabbage
- to taste salt
- to taste olive oil
- 1 pinch pepper
- 4 eggs
- 2 tbsp grated cheese
- 1 roll round puff pastry dough
- 4 oz mozzarella (for pizza)

Steps
Sauté the chopped garlic and onion in a pan with plenty of oil for a few minutes.
Then add the vegetables, season with salt and cook for about 15 minutes. The vegetables should remain crisp.
In a separate bowl, beat the eggs with a pinch of salt, pepper and 2 tablespoons of grated cheese.
Unroll the puff pastry onto the crisp plate if you’re cooking the tart in the microwave, or into a baking pan if you’re using the oven.
Pour in the vegetables, the beaten eggs and the mozzarella. Cook for 15 minutes in crisp mode in the microwave. Or about 30 minutes at 392°F in the oven.
Delicious served hot or cold.
