Yogurt and Chocolate Mini Donuts (Egg-Free)

The yogurt and chocolate mini donuts are tasty cookies without eggs and without butter made with yogurt and partially coated with dark chocolate and grated coconut. Perfect to accompany a cup of tea or coffee and to enjoy a sweet break during the day. They keep in an airtight container for 3-4 days. For an even more indulgent variation, you can replace the dark chocolate with milk or white chocolate or enrich the decoration with crushed pistachios or hazelnuts. Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup plain yogurt
  • 3.5 oz powdered sugar
  • 1/3 cup vegetable oil
  • 1 tsp baking powder
  • grated zest of 1/2 orange and 1/2 lemon
  • 5.3 oz dark chocolate
  • to taste grated coconut (desiccated)

Preparation

  • Pour the vegetable oil into a large bowl and add the powdered sugar, then mix until you obtain a homogeneous and slightly creamy mixture.

  • Add the plain yogurt and continue to combine, then gradually incorporate the sifted flour together with the baking powder, add the grated orange and lemon zest and work the dough until you obtain a soft but workable consistency.

  • Take portions of dough of about 25 g (about 0.9 oz) each and shape into balls. Slightly elongate them and join the ends to create the classic donut shape with a central hole.

  • Place the mini donuts on a baking tray lined with parchment paper, keeping a little distance between them. Transfer to a preheated conventional oven at 356°F (180°C) and bake for about 10-15 minutes until golden.

  • Remove from the oven and let cool completely. Meanwhile, melt the dark chocolate in a bain-marie or in the microwave.

  • Dip half of each mini donut into the melted chocolate and place on parchment paper, then immediately decorate with grated coconut and allow to set before serving.
